3/4 cup p flour
1/4 cup rice flour
1/4 cup almond meal
1/2tsp baking soda
1/2 tsp cinnamon
1/4 tsp salt
1/4 cup melted butter (or can use coconut oil)
1/4 cup honey
2 eggs
1 tsp vanilla
3 good tbsp berry jam slightly warmed up

Add all dry ingredients together and stir. Melt butter and add honey and stir, add vanilla and add to dry ingredients, just stir once or twice to cool butter a bit then add eggs and mix together.
you want the dough to come together to a ball, if too wet add a little bit of flour till it comes together.
wrap in glad wrap and chill in fridge for 30mins or till just firm. roll dough out to a rectangle and cut into long strips.
Add a little of jam and fold dough over and press down to make a bar(hint: don’t make bars too big i made my about 10cm(once folded) in length and it was a great size.
bake for 12-15mins on 150 deg. do not over cook just slightly brown or it will be too tough.
